We're almost to the winter solstice! It's hard to think that fall is still here, but the winter solstice and the pagan traditions of Christmas is what gives us Christmas as we know it today. The origins of Christmas root back to Europe alongside with many pagan and wiccan traditions such as the Nordic Yule. In celebration of the holidays, I want to give back by offering free winter solstice distance reiki session. Every solstice, I offer free distance reiki to anyone around the world. Whether you'd like healing sent to a personal issue or healing sent to part of the planet, please submit your request on the form below. Please send no more than 5 sentences about your situation. Who doesn't love grilled cheese? Grilled cheese reminds me of fall as a child. It was the time of year where my parents made tomato soup and grilled cheese with pickles.
I remember fall in Ohio as a child. The folliage was beautiful and playing in the leaves were a seasonal essential. Today, in Seattle, fall is a long season. Even now in December, some trees are still foliating. I spent as much time in nature as possible this fall, of course, when it wasn't dumping rain. The beautiful leaves changed from hues of green, yellow to red. These colors contrasted with the various shades of grey Seattle skies.
As a kid, I came home from school starving and my father used to say, "Eat some cheese on apple to tie you over before dinner." Cheese on apple? That sounded gross to a kid who wanted to eat Pop Tarts, but my granola-munching parents refused to let us eat anything processed or dyed with food coloring.
But, to my surpise, I loved cheddar cheese on apple. Once again, mom and dad were right. The sweet and savory combination combines the best of both flavors. As a vegan, non-dairy packaged cheeses taste different. I prefer the cheeses baked or melted, versus cold, on bread. The fall folliage and the various shades of Gala apples inspired me to mix and match sweet and savory flavors. It by far is one sophisticated vegan grilled cheese.
My local Grocery Outlet sold Field Roast's cocnout herbal cheese. The sweet hint of coconut and apple contrasted with the savory flavor of the herbs. And the sandwich goes perfect with a classic bowl of tomato soup.
My only complaint is that this cheese doesn't melt. I tried everything from baking the grilled cheese to "pan-frying" the sandwich, but the cheese didn't actually melt. Certain brands have a higher tolerance for heat and this cheese didn't melt as I hoped.
Field Roast's Coconut Herb Apple Grilled "Cheese"
Cook Time: 10 minutes Ingredients: Sliced Bread (used flourless bread like Ezekial) Gala Apple, sliced Field Roast's Coconut Herb Cheese (or regular creamy cheese) Vegan Butter Directions: Butter one side of each piece of bread. Place one or two slices of cheese and apple slices inside the bread. Heat a non-stick pan and place the sandwich in the pan, covered with a lid. Cook for several minutes and flip the sandwich. The second side of the sandwich cooks quicker than the first. If making multiple sandwiches, the second (and thereafter) sandwich cooks quicker because the pan is hot.

There are many ways to interpret this quote, and normally I don't like the words "all or nothing," but there is something we can learn from this Irish poet.
I believe extremism gets us no where. At times, I think it causes more harm than good. Balance in thought is just as important as balance in life. Extreme opinions can be found on both ends of the spectrum, where sadly, those opinions spew more hateful thoughts, ideas and yes, opinions than balanced, rational thinking. In this "new age" we are susceptible to extremism energy. Extremism coupled with stubborness and the notion, "I'm right and you're wrong" is bound for disaster. And most who claim these thoughts lack something in life, which does not fulfill their soul. Nature contains thousands of different types of leaves and hundreds or different types of birds. There will never be one type of opinon. Opinions are merely a thought channeled through the lens of how someone sees a situation. In fact, we can learn more eachother if we listen with an unbiased ear. Because someone's opinion is not necessarily right or wrong - it's different.
