Today, people are freaking out about the upcoming changes in the US presidential administration. When you prepare yourself mentally that everything in life changes, ALWAYS, you can better set yourself up for individual and collective change. Change may not be easy but you can transition as the wind blows, north, south, east or west. Everything moves. Everything evolves. Everything changes. The season, technology, the population of a species, we are biological creatures that are a part of this planet's fate. In every era, people had to adapt to some form of change. This post is a little late, but it's never too late to be inspired by nature and the food that we eat. In the fall, the foliage inspired me to cook up something hearty, warm and colorful for the soul. And what better way to ignite nourishment than with a nice crockpot of vegan chili. Chili and cornbread is an American wintertime favorite. I get a bit nostalgic with chili. It reminds me of childhood. Either my mom would make homemade chili or we would buy fresh cornbread and chili from a store called, Mustard Seed, in Solon, Ohio. It was one of the first stores that I remember that promoted vegan and vegetarian-friendly food. There are so many styles of chili, but with the foliage, I desired a bit of traditional red, yellow and green colors. Plus, one can never go wrong with adding a bit of kale to their meal. If you want to increase the spiciness, feel free! I cannot consume spicy food and just the scent of really hot food makes my eyes water. I prefer to taste flavor instead of heat. As for the cornbread, if you want the cornbread to be more sweet or moister, add a bit more maple syrup and/or almond milk. Together, let's enjoy the slow food movement with something nice and warm this wintertime season. Slow Cooker Vegan Kale Chili Cook Time: 6 hours Serves - 5-6 Ingredients: 1 can of black beans, washed and rinsed 2 cans of kidney beans, washed and rinsed 1 can of Great Northern white beans, washed and rinsed 2 large cans of crushed tomatoes 1 1/4 cup kale, chopped 1/2 of medium zucchini & yellow squashed, chopped 1 red onion, chopped 1 red pepper, chopped 1/2 tsp cumin 1/8 tsp dried basil 1/8 tsp paprika 1/2 tbsp chili powder salt + pepper to taste optional: add jalapeños to taste Directions: Prep the ingredients and then place all the ingredients into the crockpot. Set the crockpot on the 6 hour setting. Vegan & Gluten Free Sweet Cornbread Prep Time: 7 minutes Cook Time: 20-24 minutes Ingredients: 1.5 cups cornmeal 1 cup all purpose gluten free flour (or regular flour for non-gf) 1 cup nondairy milk (used almond) 1/4 cup maple syrup 1/4 cup coconut oil, melted 1/2 tbsp baking powder 1/2 tsp salt Directions: Preheat the oven to 350-degrees. Mix the dry ingredients in a bowl. In a separate bowl, mix the wet ingredients together. Pour the wet into the dry and mix until combined. If you need the batter to be moisture or more sweet, add additional milk / maple syrup one tablespoon at a time. Pour the batter into a greased pan (used 9x5 bread pan) and cook for 20-24 minutes. Check the bread by poking the center with a knife or toothpick. The bread is done when the utensil comes out clean. Do you have a favorite crock pot recipe? If so, let me know! I'd love to make it.

We often praise courage as the strength to get up and share your opinion, thoughts or ideas, but we forget that it also takes the strength to sit and listen to the other side of the story. And what better time than now in America to sit and listen to the other side of the story. The world is a complex place, always has, and always will be. I don't think there will ever be one agreement of how to live, think, eat and breathe. What we can do is become more neutral so we have a better idea of where everyone is coming from. The End - Day 12 - is here!
The world is an interesting place. It's filled with so many cultures that we all have a different perspective on how we see the world. It's what makes the world so fascinating but complex simultaneously. For this resolution, it's important to never forget who you. In life, people will judge you, and you will judge others. It's impossible, specifically with social media influences, to live a judgement-free life. I've seen this in social settings where we all think this person is making a mistake or that person should be doing something better. It's natural to worry and feel for your friends and loved ones. But, we must realize that we are only in charge of our own lives. This 'food for thought' resolution is to inspire you to never forget who you are. Each one of us has a different role to play in this world and we must share our gifts despite what others think, say or criticize about us. Awww day 11, and do you remember the good-old days of paper and pen?
How cute and authentic life was back then. I think that's why so many people love (collecting) antiques. A hand written letter tells us so much. It shows us how different hand writing distinguishes mood, personality and the characteristics of an era. If you look back throughout human history, handwriting has changed. And today, it's changing more since schools are not teaching cursive. Today I want to bring back hand-written letters. Throughout my first steps into the world of calligraphy, there is much to understand about the letters and the Roman alphabet. Let's go old school, especially for Valentine's Day with something handwritten. It's much more personal and you can feel the energy, unlike an sms or emoticon. So, who will you write today?
Isn't it interesting how helping someone has transformed from a genuine act of kindness to something that has attached an expectation? I've seen it in the corporate world, "Hey, I'll help you. If you help me." It's the way of the world now, and we can't change that but we can reignite authentic helping.
Today's resolution is simple. Help someone who can't help you. Whether it'd be taking the time to hold the door for someone, donating unused clothes, sparing some change to a homeless person, or helping a friend/family member with something, let's bring back the goodness from people without any attachments. Do it because you want to do it. Not because you hope that one day that person will help you in return.
Day 9 is here, and this resolution features some "food for thought." Yesterday, I shared thoughts about eating healthy, but now in order to be healthy you must put yourself first and prioritize your health.
America is a pretty extreme country. We work hard. We workout hard. We follow starvation diets. And we often forget about taking care of ourselves. We've become so involved in putting everything else first - work, children, responsibilities - that it seems "selfish" to take care of ourselves. Why do we think like this? I believe it's because our culture is so extreme. Some people ALWAYS put themselves first before the well-being of others (like our pesky establishments such as Monsanto or Big Pharma) that this turns people off from "being selfish" and so they go the other extreme on ALWAYS giving and they never receive. I see this a lot with animal activists or people who exist because of their job. They give, give, give and give until their heart is bleeding with endless problems. They given all of their energy to giving that they don't have time for themselves. I see that they need to heal. I believe in a balance between giving and receiving. And in order to heal your wounds, you must put yourself first. We need to disassociate feelings of guilt to make ourselves healthy, whole and complete. When you put yourself, you make your naval chakra (the power center) stronger. We are born with an umbilical cord connected to our naval. Think about this. If you constantly give to your boss, especially without getting anything in return, you are letting your boss pull your power cord (the invisible umbilical cord) and suck all of the energy out from you. Put yourself first, at least once this year. It's a #1 year in numerology, so what better time than now. As we approach the last few days of my #12daysofresolutions I decided to focus one resolution on healthy eating. Diet and exercise are common new years resolution goals. Although important to healthy living, it commonly fails because we attach our results on many external factors (how others see us). In order for lifestyle and behavior changes to shift, one must connect to the real reasons on why they want change. This comes from within. And it's time to start thinking about food differently. Food is medicine. And nature provides the right foods that we need in order to survive. People who connect food to the nourishment of their inner-world find the most success. Food isn't meant to make us look like a supermodel, it's meant to nourish our organs, brain, bones, muscles and mindset. You are what you eat. But you eat what you are. The gut-brain connection is complex, but the easiest thing to understand is that your mood dictates your food. Plants obtain energy not only from the soil, but also from the sun, the same star that energizes us. So, what will you eat today? Day 7 is here, and I'm over halfway done with my #12daysofresolutions. Today is a resolution that is more "food for thought" that can be followed by action. Throughout my training and coaching career, I have heard a fair share of jealousy stories. Some people are not jealous people, but they envious of what others have achieved. Promotions, job opportunities, gigs and pay raises, whatever it is, praise the person for their achievement. I believe we are all sent here for a reason. And for whatever reason, some lives blossom quicker than others and some people must learn countless lessons before they are rewarded. Just know that you are on your path to success and the more you compliment others, the more you detach your happiness and self-worth to promotions, job titles, gigs and pay raises. Sometimes our "lack of success" is a blessing in disguise. Maybe your co-worker Susie, got the job promotion and sure, it may look good on paper, but now Susie must attend evening dinners with the CEO. This is about gains and losses. Susie gained an excellent job title and a slight pay raise, but she loses her time. Meanwhile, you lost a job title, but you gained your time back. So while Susie is at work on a Thursday evening, you are either at happy hour or spending time with your kids. You see there are pros and cons, light and dark and "good and bad" in every situation. So this resolution "forces" us to see the light in every situation.
Day 6 is here and I'm rolling on the inspirational bandwagon.
If you've followed me, it's no secret that I love quotes and words of wisdom. In fact, every Sunday I share thoughts about a quote, called Sunspiration, in 150 words or less. And today my resolution of reading three quotes randomly takes place on a Sunday. I started Sunspiration because I loved sharing/reading quotes and motivational messages. To my surprise, I healed some parts of myself without intention. Each week, I chose a quote, thought about it and then wrote my thoughts or analysis. I, like many people, are naturally programmed to think, want or desire things. Should I be doing more for mr career? Should I make more connections? I'm changing, should I cling on to old ways? Or continue shedding my skin? These things consumed my mind because I detached from my old ways while living in Germany. Europe reawakened the knowledge I obtained by wandering the globe that there is more to life than work, work and work. Sunspiration flooded my mind with motivation or the belief that my experience here on earth is satisfying through the expansion of my soul. It allowed me to become more in-tune with my inner world, nature and the respect of change and our roles in the world. Reading quotes and uplifting messages is like pounding a nail into a wall. Words of wisdom are "beaten" into the head and once that happens, there's a shift in thinking. My spirit became stronger and this can happen to you. It's retraining the brain to think differently. Yes, it'll be more positive but this allowed me (and for you too) to EMBRACE the stones that God throws us. We will never escape low points, but we must work through it. And these quotes inspired me that good things will come when overcoming adversity and life challenges. So today, I challenge you to read 3 quotes to inspire and uplift your being.
