Third times a charm. My husband, Josh, just loves his crock pot. One dream of ours is to retire early. This wouldn't mean doing nothing, but reducing our day work so that we can focus on things that we are passionate for.
One way to achieve this goal is to cook healthy and affordable meals from home.
Inspired by this howsweeteats.com recipe, Josh made another fantastic crockpot meal that I just had to share.
I've been practicing my calligraphy and foods like oatmeal boosts my brain and gives me energy to focus on my creative pursuits. Calligraphy is very therapeutic and integrating my passion for good, slow food and knack for words is something I hope to get into more in the future. Until then, enjoy and this recipe you can add, reduce or change any of the ingredients to match your palate.
Vegan Slow Cooker Apple-Spiced Steel Cut Oatmeal
Cook Time: 8 hours
1/2 cup steel cut oats
3.5 cups almond milk
1 cup water (or almond milk)
2 cups apple, diced
3 tbsp coconut oil
1 tbsp vanilla
1/2 tbsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
Pinch of cardamom
Couple tbsp brown sugar (or packets of stevia)
Optional: 2 tbsp vegan butter
Optional toppings: coconut shreds, raisins, chopped almonds, brown sugar
Place ingredients into the crockpot, mix and cook at the 8 hour setting. Serve warm & adjust any spices / sweetener as needed. If the mixture seems thick, add up to 1/4 cup extra almond milk.
