Sunspiration #36: God Throws Stones as a Wake Up Call & To Build Strength in Your Foundation

Some of the most powerful stories come from those who achieved the impossible. These stories are inspirational, motivational and give us faith that good times will come when we are down. 

I believe God throws stones as a "wake up" call on the individual and collective level. One common example is the doctor saying, "If you don't change your eating habits you will become a diabetic." 

The doctor is the stone. It's the wake up call! 

Stones strengthen your personal foundation. The more stones you have, the stronger your aura and foundation will be. You become a "rock wall," toughened up from all those hard times. The stronger you are, the easier those future stones will ping off when rough times return.

Vegan Slow Cooker Apple-Spiced Steel Cut Oatmeal

Third times a charm. My husband, Josh, just loves his crock pot. One dream of ours is to retire early. This wouldn't mean doing nothing, but reducing our day work so that we can focus on things that we are passionate for. 

One way to achieve this goal is to cook healthy and affordable meals from home.

Inspired by this howsweeteats.com recipe, Josh made another fantastic crockpot meal that I just had to share. 

I've been practicing my calligraphy and foods like oatmeal boosts my brain and gives me energy to focus on my creative pursuits. Calligraphy is very therapeutic and integrating my passion for good, slow food and knack for words is something I hope to get into more in the future. Until then, enjoy and this recipe you can add, reduce or change any of the ingredients to match your palate.

Vegan Slow Cooker Apple-Spiced Steel Cut Oatmeal
Cook Time: 8 hours
Serves: 6

Ingredients:
1/2 cup steel cut oats
3.5 cups almond milk
1 cup water (or almond milk)
2 cups apple, diced
3 tbsp coconut oil
1 tbsp vanilla
1/2 tbsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
Pinch of cardamom
Couple tbsp brown sugar (or packets of stevia)
Optional: 2 tbsp vegan butter
Optional toppings: coconut shreds, raisins, chopped almonds, brown sugar

Directions:
Place ingredients into the crockpot, mix and cook at the 8 hour setting. Serve warm & adjust any spices / sweetener as needed. If the mixture seems thick, add up to 1/4 cup extra almond milk.

Vegan Slow Cooker Sweet Potato Quinoa Chili

My husband.....he did it again!

He's the king of the crockpot and made another vegan-friendly slower cooker meal like my latest post: Vegan Slow Cooker Mexican-Style Sweet Potato Black Bean Chili.

This blog post will be short and sweet, just like this recipe. When he told me what type of ingredients he would use, I became skeptical. Baked beans in chili? The hint of sweetness combined with the cumin and chili powder ignites the dance between sweet-n-heat.

Quinoa soaks up the broth after 24 hours of sitting. You can use the remaining 1 cup of broth to make it soupy each time you heat the chili. I'm very proud of his work and felt that I had to feature this recipe. The crockpot is one of the easiest to use and most effective kitchen tools for busy people, and one goal is for Mind Body Soul Food to keep sharing easy and affordable recipes for the family.

Vegan Slow Cooker Sweet Potato Quinoa Chili
Cook Time: 8 Hours
Serves: 4-6

Ingredients:
1/2 cup uncooked quinoa, rinsed in a strainer (used red  quinoa)
1 can pinto beans, drained and rinsed
1 can of baked beans
3 cups vegetable broth
1 12-oz. package of vegan fake meat crumble
1 28-oz can of diced tomatoes
1 medium onion, chopped
1 green pepper, chopped
2 sweet potatoes, chopped
1/2 tbsp chili powder (add another 1/2 tbsp if you like more heat)
2 tsp. cumin
1/4 tsp paprika
Salt + pepper to taste
Optional toppings: cilantro + avocado

Directions: Place all the ingredients into the crockpot and stir the ingredients together. Cook at the 8 hour setting and serve warm.

Sunspiration #35: The Battle Between Light & Dark

From yoga prayers to the bible, ancient spiritual teachings talk about the battle between the light and dark. 

On an individual and collective level, light and dark exists in all levels of life. The one we should be most concerned about our own light and shadow sides. We cannot eliminate the shadow within us, but we can CONTROL it. 

After I studied yoga in India, the light consumed me. I worried so much about my shadow side that I completely ignored those processing of those emotions. And at times, kindness can be taken advantage of by those who see kindness as a weakness. 

The point is to balance the energies. We cannot have yin without the yang. Our shadow side can protect us, since many people think the shadow is bad and they don't want to ever expose that side of themselves. It's about understanding the benefits of both as a flower with too much sun withers away and dies. 

It's all about balance and spreading as much light as you can in a dark world.

Vegan Slow Cooker Mexican-Style Sweet Potato & Black Bean Chili

I can't take full credit for this recipe. Every Sunday, my husband uses the crockpot to make his lunches for the work week. He believes the crockpot is one of the best inventions as it's an easy to use and efficient tool for busy people. 

He's big on saving money, specifically during the work week, which is why he (and me too) bring lunch to work. Not only is it healthier, but packing lunch saves money.

He used a similar recipe from the Minimalist Baker.

Crock pots are perfect for busy people. You can make a meal overnight or while you're at work and voila, dinner is served. As a health coach, I work with busy people who find it hard to cook. Sadly, some effort has to be made to create homemade meals, and nothing is easier than the crockpot. 

What I love most about this dish is that it's easy and uses easy-to-find ingredients.  If you love Mexican food, you'll definitely enjoy this hearty and healthy chili. I liked the chili as is or served with tortilla chips.

Vegan Slow Cooker Mexican-Style Sweet Potato & Black Bean Chili
Cook Time: 8 hours
Serves: 4-6

Ingredients:
4 cups vegetable broth (32 oz)
2 cans black beans, rinsed
3 sweet potatoes, chopped
1 small sweet onion, chopped
20 oz. jar of mild chunky salsa
1/4 cup brown rice
2 tsp. cumin
1/2 tbsp. chili powder
Salt & pepper to taste
Optional toppings: cilantro & avocado

Directions:
Wash and prep the vegetables. Place all the ingredients into the crockpot and mix. Cook on the 8 hour setting. Serve warm.
